Chickpeas (Chana): 1/3rd cup (soaked overnight and boiled with salt; reserve boiling water)
Boiled Beetroot: Small piece for color and nutrients
Garlic: 2 pods
Tahini or Curd/Yogurt: 1/2 tsp
Lemon Juice & Black Pepper: To taste
Ice Cubes & Reserved Chana Water: For blending

Air-Fried Onions: Sliced thin and air-fried at 80 C (280°F)for 40-50 minutes until crispy.

Prep the Components
Mexican Rice: Boil your low-GI rice like regular. While serving, toss it with a mild pinch of salt, oregano, peri-peri powder (or Mexican seasoning), fresh lemon juice, and chopped coriander, mint, and basil.
Stir-Fried Veggies: Toss the sliced bell peppers in a dry non-stick pan (no oil) and season with oregano and chili flakes to taste.
Kidney Beans (Rajma): In a non-stick pan, roast the minced garlic on low heat until fragrant. Add the boiled rajma along with some reserved boiling water so it stays juicy and moist (not dry). Season with salt, oregano, and chili flakes. Beetroot Hummus: Add the boiled chana, beetroot, garlic pods, tahini (or curd), lemon juice, and black pepper into a blender. Add a splash of the reserved chana water and an ice cube, then grind into a thick, smooth paste.
Fresh Salsa: In a small bowl, mix together the chopped raw onion, tomato, deseeded green chili, and coriander. Squeeze fresh lemon juice and add salt and pepper to taste.
Protein (Optional): Grill or pan-sear your choice of chicken breast, low-fat paneer, tofu, or egg whites separately with mild seasoning.
Assembly :
Layer the ingredients into a serving bowl in the following order:
Base: Place cooked low-GI flavored rice at the base.
Sauce Layer: Add 1 tsp of beetroot hummus.
Veggies & Beans: Arrange the stir-fried bell peppers on one side and a scoop of the moist, garlic-roasted rajma on another side.
Salsa: Add the fresh raw onion-tomato salsa.
Protein & Salad: Pile on the cleaned, chopped lettuce (and optional protein if using).
Garnish: Top with 1 more tsp of beetroot hummus and crispy air-fried onions.

For Women (Light Portion):
Rice Base: 1/3rd cup cooked flavored rice
Hummus: 1 tsp at the base + 1 tsp on top (2 tsp total)
Keep the Rajma Saucy: Don't let the kidney beans dry out completely while roasting with garlic. keep some cooking water in the pan so they add richness and moisture to the bowl!
Watch the Salt: To keep this truly low-calorie and healthy, ensure you add a bare minimum amount of salt to each item, as it quickly adds up across all the different layers.
